Big fan of the Fennel myself. Fresh Fennel/Anise should be chosen according to how good it looks (i.e. nice pure white bulb, rich green stalks and hearty green leaves). All parts of the Fennel are edible so you want to make sure that all of it's parts are fresh and appealing in appearance. Can you tell I work with fresh produce daily. Otherwise my attention to detail concerning Fennel may be freaky:)
