I start off by choosing the white-balance setting on the camera which I like best... not the one that's the "most real". I really don't give a flying whatsit about any sort of "correct" color or exposure. Every shot then goes through Photoshop where I make all sorts of decisions about density and color. So... the answer to your question is..
